Supplier Focus - La Cremerie - Cheese Wedding Cakes

Savory tooth?  How about a Cheese Wedding Cake?

Where are you based?
La Crèmerie is a small family business owned by Emma Dandy, based in the hamlet of Nettleden, just north of the beautiful market town of Berkhamsted in Hertfordshire.

How long have you worked with Cheese?
I have been passionate about cheese since my Mother first let me try some of the Stilton she was having for lunch when I was about five years old. I can still remember the taste - creamy and buttery but with salty and spicy notes too. Delicious! I have since developed a sound knowledge of cheese by constantly trying new and unusual cheeses - helped by frequent travel around the British Isles, France and other European countries. I decided to turn my passion into a business following a career break to raise my family. La Crèmerie opened for business in May 2010 and is a member of The Guild Of Fine Food, a group dedicated to sourcing the best artisan produce for consumers.

How long does it take you to create a Cheese Wedding Cake?
La Crèmerie offers a bespoke Cheese Wedding Cake service with cakes designed to meet the client's requirements, so it is difficult to say exactly how long the cakes take to create. I like to meet each client personally, if possible, to discuss how many tiers of cheese are required along with how much cheese per guest is needed. Each cake offers a balance of styles and flavours - for example a hard cheese, a blue cheese and a soft white cheese - with all the cheeses used coming from small artisan producers, many of whom have won awards for the quality of their produce.

Do you have a favorite Cheese?
My favourite cheese changes so often - there are just too many fantastic cheeses in the world to be able to choose one! I particularly like a good traditional farmhouse cheddar such as Keen's and think Colston Bassett Stilton is hard to beat. There are also some really exciting new cheeses being made now in the British Isles such as Wigmore - a delicious ewe's milk cheese from Berkshire - and Coolea, a wonderful Irish creation.


Which month is your busiest month?
For the retail side of La Crèmerie, the weeks leading up to Christmas are pretty manic! For Cheese Wedding Cakes - most months are fairly busy with couples tying the knot, but I still find the traditionally popular summer months the busiest.
